DIY Coconut Butter!

I don’t know about you, but I’ve spent SO MUCH MONEY on jars of coconut butter! Those things are expensive! But I can’t live without it 🤷

The other day I was at trader joe’s and realized that their bag of organic unsweetened coconut flakes is only $2! and a jar of coconut butter is AT LEAST like $8!

So I thought – I’ve already made my own nut milks, and I’ve made nut butters and it’s so easy! so why not try making my own coconut butter? It seemed too good to be true.

I got a bag of their coconut flakes and went home to experiment. Turns out you need 2 whole bags to make one full mason jar (1.5 cups) of coconut butter, so in the end it’s $4 but I’m not complaining because that’s still half the price of a store-bought jar. And it’s literally the same thing!

So enough with my rant about overpriced coconut butter and on to this super easy recipe that’s done in like 5 minutes!

ingredients

  • 5 cups unsweetened coconut flakes (Trader Joe’s has the best price but if you want to get it online I love this brand)
  • 1 tsp vanilla bean powder (optional)
  • 1 tsp cinnamon (optional) 

directions

  1. Add coconut flakes to a food processor and process until it becomes a creamy butter consistency.
  2. If you want to flavor it a little, add in the vanilla and cinnamon and process a little more to incorporate.
  3. pour butter into a mason jar or other air-tight container and keep in a cool, dark place for up to a month! (do not refrigerate or else it will become too hard)
  4. Use the butter as a drizzle over smoothie bowls or oats, spread on toast, make your favorite bliss balls or just enjoy by the spoonful!
