I’ve never really been a muffin person, but for some reason I found myself craving them the other day. So since it’s so hard to find a recipe that meets all my restrictions, I went ahead and made my own!

I love the apple cinnamon combo, especially once it’s been baked in the oven, so I knew these apple cinnamon muffins would be the 💣 dot com.

The thing with any AIP baking recipe is that it usually comes out with a gooey texture on the inside instead of a more bread-like one. I don’t mind this at all, but if you do I would recommend leaving these in the fridge for a while after it’s cooled down from the oven so that the texture becomes a little firmer.

  1. Pre-heat the oven to 400 degrees and line a muffin pan with muffin/cupcake liners.
  2. Add all the dry ingredients (cassava flour, coconut flour, cinnamon, ginger, clove, vanilla – if using powder – baking soda and salt) to a medium bowl and pix until well combined.
  3. Add in all the wet ingredients (apple sauce, coconut milk, coconut oil, raw honey, lemon, and vanilla – if using vanilla extract) and mix everything together.
  4. Add in the apple chunks and fold them into the batter with a spatula. Reserve some of the pieces for topping.
  5. Using a cookie scoop, scoop the batter into the muffin liners. Add some apple pieces on top of each muffin and top with some cinnamon and pink salt.
  6. Place in the oven and cook for 50 minutes. Once the muffins are done, let them cool completely before eating or putting away in the fridge. They will have a gooey consistency, but after being stored in the fridge will become more firm.
  7. Enjoy!

  • 1 tbsp cinnamon

  • 1 tsp ground clove
  • 1/2 tbsp vanilla powder or alcohol-free vanilla extract
  • a pinch himalayan pink salt
  • 1/4 tsp baking soda
  • 1/2 cup + 1 tbsp organic unsweetened apple sauce
  • 1.5 cups + 1.5 tsp coconut milk
  • 4 tbsp coconut oil, melted
  • 1 tsp raw honey
  • 1/2 lemon lemon, juiced
  • 1 apple, cut into small pieces (I like honeycrisp, but any apple will work!)
