– creamy cacao matcha latté | Vegan bulletproof –
The first post of 2018 is a good one if I do say so myself! I hope everyone had a great new year and I am so excited to be sharing this recipe for my new favorite way to enjoy my matcha.
If you’ve been following the blog since the beginning, you would know that I was all about the bulletproof life at the beginning of last year. I loved how it made me feel and I would have it as my breakfast every single day.
After a few months, I had to cut the bulletproof because I went AIP and needed to cut out dairy – even ghee! R.I.P. Bulletproof. 😩
I know that a lot of vegans do bulletproof with just the brain octane and no ghee or butter, but I don’t think that’s enough fat to keep me full for the same amount of time.
Quick disclaimer – I know that cacao butter IS NOT AIP. However, I have found that I don’t react to it, so I have decided to keep it in my diet. If you are avoiding cacao because of AIP, you could sub the cacao butter for coconut butter, but the flavor will not be completely the same.
So I stopped doing my bulletproof coffees and matchas – until the last month, when I discovered cacao butter! I’ve recently been using cacao butter in the place of ghee in bulletproof matcha lattés and I’m obsessed! I needed to share with you guys.
The cacao butter gives a slight chocolatey taste to the matcha and also obviously adds tons of healthy fats. Cacao butter is also packed with magnesium and does not contain caffeine, so that’s a plus!
I’ve been bringing this with me to work every day in my new S’well traveler and I’m so obsessed.
Although cacao is technically not allowed on AIP because it’s a bean, I still allow myself to have it because it hasn’t really given me any symptoms. Also, chocolate is life. 🙌🏻
I also add in some extra goods like maca and collagen, but those are totally optional!
Now I’m going to stop talking about it and move onto the recipe because this is too good for you not to try!
- 1/2 cup coconut milk (or other non-dairy milk of choice)
- 1.5 cups hot water
- 1 tsp ceremonial grade matcha powder
- 1/2 cup cacao butter chunks
- 1/4 tsp cinnamon
- 2 tbsp brain octane or MCT oil
- 2 scoops collagen (optional) – use my code HEALTHJUNKEE10 for a discount!
- 1 tsp maca powder (optional)
- 1/4 tsp reishi powder (optional)
Heat up the water on the stove. While the water is warming up, add all the other ingredients to the blender.
Add the hot water into the blender and blend on high for 2 minutes. The longer it blends, the frothier your latté will be!
